Once you make a few batches of cupcakes, all you have to do is get down to the icing. The recipes that follow, make for 24 cupcakes, so increase or decrease the amounts proportionately as you see fit. If you're pressed for time, pick up packaged cake mixes or frosting, but if you're for all things homemade, the following is great cupcake recipe, with a couple of suggestions on frosting to get you started with your baking.

Peanut Butter Cupcakes


For Icing
  • Cream cheese - 8 oz.
  • Unsalted butter - 4 tbsp.
  • Milk - 1 tbsp.
  • Milk chocolate chips - 1 tsp.
  • Vanilla extract - 1 tsp.
  • Confectioners' sugar - ¾ cup
Ingredients
  • Eggs - 2
  • All-purpose flour - 2½ cups
  • Brown sugar - 2 cups
  • Milk - 1½ cups
  • Butter - ½ cup
  • Peanut butter - 1 cup
  • Baking soda - 1½ tsp.
  • Vanilla essence - 1 tsp.
  • Salt - a pinch
Method
♦ Preheat the oven at 350°F (175°C). Grease and flour cupcake pans, or line with cupcake liners. Sift the dry ingredients together and keep aside.
♦ In a large bowl, cream the butter and sugar till it's light and fluffy.
♦ Add peanut butter and cream to the bowl until it combines completely.
♦ Add the eggs, one a time, beating well between each addition, and stir in the vanilla. In two batches, carefully fold in the flour mixture, alternating with the milk.
♦ Spoon the mixture into the prepared cupcake pan and place in oven for 15 - 20 minutes, or until the tops spring back when lightly tapped.
♦ Remove from oven and cool on a wire rack.
♦ For icing, beat cream cheese, butter, chocolate chips, and sugar in a bowl. Make sure it is smooth. ♦ Include vanilla extract and milk in. Beat for sometime and stop when the icing turns smooth and fluffy. ♦ Spread the icing on the cupcakes and add various sprinkles on top. ♦ Include creative and edible decoration on the cupcakes for Halloween look.

Chocolate Buttercream Cupcakes


For Icing
  • Cream cheese - 8 oz.
  • Unsalted butter - 4 tbsp.
  • Milk - 1 tbsp.
  • Dark chocolate chips - 1 tsp.
  • Vanilla extract - 1 tsp.
  • Confectioners' sugar - ¾ cup
Ingredients
  • Bittersweet chocolate - 12 oz.
  • Icing sugar - 4 cups
  • Butter - 2 cups
  • Eggs - 2
  • Vanilla essence - 1 tsp.
  • Salt - ½ tsp.
Method
♦ In a double boiler, melt the chocolate till smooth. Keep stirring the mixture occasionally and cool it slightly.

♦ In another bowl, beat the butter. Add salt and vanilla essence till the mixture is light and fluffy. ♦ Add the sugar, a little at a time, beating well between each addition. Once the sugar dissolves properly, add the eggs, one a time. ♦ Finally, stir in the melted, cooled chocolate.
♦ Preheat the oven at 350ºF (175ºC). Either grease and flour the cupcake pans, or line them with cupcake liners.
♦ Spoon the mixture into the prepared cupcake pan and place in the oven for 15 - 20 minutes, or until the tops spring back when lightly tapped.
♦ Remove from the oven and cool on a wire rack.
♦ Take a bowl and beat cream cheese, butter, chocolate chips, and sugar to prepare the icing. Ensure that the mixture is smooth once you're done beating.
♦ Add vanilla extract and milk in. Beat for some time and stop when the icing looks smooth and fluffy.
♦ Spread the icing on the cupcakes and place fondant flowers or stars on top.

White Frosting Cupcakes


For Icing
  • Cream cheese - 8 oz.
  • Unsalted butter - 4 tbsp.
  • Milk - 1 tbsp.
  • Vanilla extract - 1 tsp.
  • Confectioners' sugar - ¾ cup
Ingredients
  • Egg whites - 2
  • White sugar - 1 cup
  • Water - ⅓ cup
  • Vanilla essence - 1 tsp.
  • Cream of tartar - ¼ tsp.
Method
♦ In a heavy-bottomed saucepan, mix water, sugar, and cream of tartar, and cook over medium heat, till the mixture is bubbling.
♦ In a grease-free bowl, beat the egg whites with vanilla, till soft peak consistency.
♦ While keeping the beater running, add the sugar solution in a steady stream, and continue beating till the frosting takes on a glaze.
♦ You will get hard peaks when you lift the whisk.
♦ Preheat the oven at 350ºF (175ºC). Grease and flour cupcake pans, or line them with cupcake liners.
♦ Spoon the mixture into the prepared cupcake pan and place in the oven for 15 - 20 minutes, or until the tops spring back when lightly tapped.
♦ Remove from the oven and cool on a wire rack.
♦ To prepare the icing, beat cream cheese, butter, and sugar in a bowl. Make sure it is smooth.
♦ Milk in after adding the vanilla extract. Beat for sometime. Stop when the icing turns completely smooth and fluffy.
♦ Spread the icing on the cupcakes and add your favorite embellishment on top.
