Ingredients
28 large white mushrooms, stemmed
♦ 2 tablespoons parsley leaves, chopped
♦ 2 garlic cloves, minced
♦ 1 tablespoon mint leaves, chopped
♦ ½ cup Italian-style dried bread crumbs
♦ ½ cup grated Pecorino Romano
♦ ⅓ cup extra-virgin olive oil
♦ Salt and black pepper, for taste
Directions
If you wanted to prepare easy appetizers for large groups, then this stuffed mushroom recipe is perfect. First, preheat the oven at 400ºF. Next, you will take a bowl to mix in bread crumbs, garlic, parsley, mint, salt, pepper, 2 tablespoons olive oil, and Pecorino Romano cheese. Combine everything properly and with a spoon, fill the mushrooms.
Take a baking sheet, grease it with 1 tablespoon olive oil and arrange the stuffed mushrooms on it. Keep the filling side down on the sheet. Place the sheet in oven for 25 minutes or so, till the mushrooms turn tender. Drizzle some chopped parsley and mint leaves and serve.

Butternut Squash Soup


Ingredients
3 to 4 lbs butternut squash, peeled & seeded
♦ 3 tablespoons olive oil
♦ 2 to 4 cups chicken stock
♦ 2 yellow onions, chopped
♦ 2 apples, peeled & cored
♦ ½ teaspoon curry powder
♦ Scallions, white & green parts, sliced diagonally
♦ Flaked sweetened coconut, toasted
♦ Roasted salted cashews, toasted & chopped
♦ Diced banana
♦ Salt and black pepper, for taste
Directions
Here's a delicious Thanksgiving recipe for kids. To prepare the soup, first of all, preheat the oven at 425ºF. Next, on a baking sheet, combine cut butternut squash, chopped onion, and apples. Add salt and black pepper with olive oil, toss properly, and into the oven for 35-40 minutes.
Once the ingredients are tender, take the pan out. When that is happening, you will heat the stock on medium heat. Once the butternut squash mix is ready, you will blend them thoroughly. Add the stock and puree everything.
In a big pot, mix the puree with the rest of the stock. Turn on the heat on medium, add curry powder, salt, and black pepper. Let the soup boil and turn thick. Do a taste test to see if the condiments are to your liking. Once the soup is thick enough, pour into soup bowls, and garnish with scallions, coconut flakes, roasted cashews, and diced banana.

♦ 6 tomatoes, medium
♦ 4 tablespoons olive oil
♦ 3 tablespoons cilantro
♦ 2½ tablespoons lemon juice
♦ 1¾ corn kernels
♦ ½ avocado, chopped
♦ ½ cup jasmine rice, cooked & room temp.
♦ ¼ cup yellow peppers, chopped
♦ ¼ cup green peppers, chopped
♦ ¼ onion, chopped
♦ ¼ ground cumin
♦ Monterey Jack cheese, grated
♦ Salt and black pepper, for taste

For a quick and delicious Thanksgiving appetizer, let's learn to make stuffed tomatoes. First of all, preheat the oven at 350ºF. Next, in a bowl, you will mix, corn kernels, rice, avocado, yellow & green peppers, onion, cilantro, salt, pepper, cumin powder, lemon juice, and olive oil together. Combine properly and set it aside.
Take the ripe tomatoes and cut the tops off. With a spoon, take the seeds and filling out and fill the tomatoes with the mixture you made. Place the tomatoes on a baking sheet and sprinkle cheese on top. Keep the sheet in oven till the cheese turns lightly brown. Remove the pan and serve the appetizers.
