Chocolate Mousse


Ingredients
♦ Sugar, ¼ cup
♦ Heavy cream, ¾ cup
♦ Bittersweet chocolate, 2 oz.
♦ Cocoa powder, unsweetened, chopped, 2 tablespoons
♦ Eggs yolks, large, 4
♦ Pinch of salt
Directions
Take a double boiler, add whisked egg yolks, sugar, and pinch of salt. Over low heat, whisk the mixture till the sugar dissolves completely. Remove the bowl off the heat to add chopped chocolate bits. After the chocolate melts, add cocoa powder and mix again. Leave the liquid aside to cool down.
In a different bowl, whisk the cream till it turns into whip cream. When the chocolate mixture is cold, fold in the whipped cream. Don't stir or anything; it has to be folded into the chocolate in one direction. Take 4 different serving plates and divide the mousse. Refrigerate for about 2 hours. Once the mousse is chilled, serve with chocolate shavings.

Banana-Bourbon Cake


Ingredients
♦ All-purpose flour, 2¼ cups
♦ Granulated sugar, 1½ cups
♦ Heavy cream, 1 cup
♦ Buttermilk, ½ cup
♦ Sour cream, ¾ cup
♦ Bourbon, ¾ cup
♦ Salt, ½ teaspoon
♦ Unsalted butter, room temperature, 10 tablespoons
♦ Confectioner's sugar, 2 tablespoons
♦ Dark brown sugar, 2 tablespoons
♦ Vanilla extract, 1 teaspoon
♦ Baking soda, ¾ teaspoon
♦ Baking powder, ½ teaspoon
♦ Eggs, large, 3
♦ Bananas, 3
Directions
We know that the ingredients' list on this dessert is really long, but it's a simple dessert. First of all, preheat the oven at 350ºF. Next, take two 8'' round cake pans and grease and flour them properly. In a small bowl, sift flour, baking powder, baking soda, and salt. Keep the bowl on the side till we need it.
Now, in an electric mixer, cream butter and sugar together. Add eggs yolks one by one and mix properly. Take a different bowl to mash bananas with buttermilk and vanilla extract. Add to the electric mixer slowly, and mix thoroughly.
Beat the egg whites untill they turn frothy and fold inside the batter in the electric mixer. In the 2 greased pans, separate the batter equally and bake for half an hour or so. Bring the pans out and let the cakes cool down. In a bowl, whisk the cream and confectioner's sugar till it's frothy. Fold the sour cream in the end and layer them over the cakes.
Take the cake and keep in the refrigerator for an hour to chill. Slice the bananas equally, melt the butter in a pan, and sizzle the slices till golden brown. Add the sugar; this helps in browning the bananas. In the end, pour the bourbon in the pan and torch it with a match. Be careful when bananas catch fire. Let the banana slices get tossed in the sauce.
To serve this delicious cake, bring the cake out of the refrigerator, place the banana slices over the cake, and pour the sauce from the pan. Cut into slices, and enjoy.

Pecan Truffles


Ingredients
♦ Dark chocolate, 7 oz.
♦ Pecans, toasted, chopped, 2½ cups
♦ Graham cracker, crumbs, 1 cup
♦ Dark brown sugar, packed, 1 cup
♦ Bourbon, ¼ cup
♦ Maple syrup, 2 tablespoons
♦ Vanilla, 1 teaspoon
♦ Salt, ½ teaspoon
Directions
First of all, freeze a cookie sheet for about 2 hours. To make the pecan truffles, take a bowl to mix in graham cracker crumbs, brown sugar, pecans, and salt together. Next you will mix the maple syrup, vanilla extract, and bourbon in. Mix the ingredients properly and make small balls, size depending on you.
Take the frozen cookie sheet, place parchment paper over it, and place the pecan balls on it. Prepare a double boiler and melt the chocolate. With the help of the tongs, dip the pecan balls in melted chocolate and back on the sheet. Let them get firm; start digging in once ready.
